My husband’s heritage is Lebanese and this has a great influence in our kitchen. He is an avid cook and our house frequently smells of cinnamon, allspice, and zatar, common spices in Middle Eastern cooking. A Lebanese holiday cookie is mamool (many spelling variations) which is a basic butter cookie filled with dates and nuts and pressed into a wooden mold and baked. These intricately carved wooden mamool molds were used to make clay stamps that I press into my pottery. Hence, mamool ware.
